1 1/2 cup cashews nuts
1 1/2c shredded coconut
2 x lemon (juice and zest)
2 Tbsp real maple syrup
2 Tbsp virgin coconut oil (softened but cool)
1 tsp vanilla paste
pinch of sea salt
Place the ingredients into your processor and pulse until the mixture is smooth. Using your hands shape the mixture into balls. Roll in coconut and place in the fridge to firm up a little.
